Salmon and Kumquat Spread

1 half pound of wild salmon filet
5 kumquats, sliced thin
1 tablespoon butter
1 tablespoon olive oil
1/3 cup sour cream
Sea salt
Freshly ground pepper

1. In a heavy skillet over medium heat, melt the butter with the olive oil.

2. Place the salmon and the kumquats in the pan and sautee. Allow the salmon five minutes on one side and the flip. Three minutes on the other.

3. Allow the salmon and kumquats cool and then place in food processor with the sour cream, salt and pepper. Process until smooth.

4. Spread on small toasts or crackers.
