Grilled Lamb Chops
Pork chops can be substituted.
3 large cloves of garlilc, finely chopped
2 tablespoons chopped fresh rosemary
1/4 cup olive oil
fresh ground pepper to taste
8-12 rib lamb chops, well trimmed of fat
salt to taste
lemon slices (optional)
1. In a small bowl stir together the garlic, rosemary, olive oil and pepper. Place the lamb chops in a shallow dish and brush the mixture over them. Cover and refrigerate for at least two hours or as long as overnight.
2. Prepare the grill or broiler. Brush the rack, or broiler pan with oil. Place the chops on the rack and cook, turning as needed until browned and crisp on the outside, about 10 minutes.
3. Transfer to warmed individual plates, sprinkle with salt and serve immediately with lemon slices.

additional notes
1. Produces in Italy have been experimenting with the so-called French varietals (Cabernet Sauvignon, Merlot, Chardonnay) for some time now. This wine is a blend of Merlot, and the king of the Italian grapes, Sangiovese.
2. Castello di Montoro Merlot differes from the traditional Merlot in that the Sangiovese adds acidity and body.
3. The aroma is clean with a nice blend of dark fruit and spice. The musty wet dirt smell is a hallmark of many Old World wines.
4. Though not terribly complex, this wine is pleasant and very drinkable.
