Creamy Zucchini Soup

2 tablespoons butter
1 tablespoon olive oil
2 cloves garlic
3 zucchinis, chopped
1 medium onion, chopped
2 stalks celery, chopped
Salt
Freshly ground black pepper
1 14.5 oz. can chicken broth
1 cup heavy cream
Paprika, for garnish

1. In a large pan over medium heat, melt butter with olive oil.

2. Add garlic cloves and saute until translucent.

3. Then add zucchini, onion and celery and heat until golden and translucent.

4. Allow the mixture to come to room temperature then place mixture in food processor and puree.

5. Put in the puree in a large sauce pan, over medium heat. Add broth and heavy cream, salt and pepper and simmer to blend flavors.

Serve topped with paprika and diced zucchini.
