Poached Pears with Ginger and Mint

4 bosc pears washed and pealed
1/2 cup apple juice
1 8oz can of pears in their own juice or light syrup, mashed
1 cup chopped almonds
1/2 cup crystallized ginger, diced
grated fresh ginger
3 teaspoons chopped mint leaves

1. Preheat oven to 350 degrees.

2. Place the pealed pears in an over-proof casserole. Pour the apple juice around the pears. Sprinkle the fresh fresh ginger over the pears according to taste. Place in the oven and bake for 45 minutes until tender.

3. Mix the mashed pears with the almonds, crystallized ginger and 2 teaspoons of the chopped mint leaves. Divide the mixture equally among four large goblets.

4. Once the pears are done, allow to cool slightly. Place a pear in each goblet and top with a sprinkle of mint leaves. Serve warm.
