Blackened Flank Steak

1 pound beef skirt steak
1 tablespoon vegetable oil

Spice Rub

1 tsp freshly ground pepper
1 tsp paprika
1 tsp garlic powder
1/2 dried thyme, crumbled
1/4 tsp salt

1. Mix rub ingredients in a small bowl.

2. Rub half on each side of the skirt steak.

3. Cut steak in 4 pieces.

4. Heat oil in a large skillet over high heat. Add steak; cook 2 minutes each side for medium-rare.

5. Remove to a platter or board and let rest 5 minutes before slicing across the grain.

• The Syrah grape has become so trendy that in the 1990's, its acreage in California grew some 12,000%. In France, Rhone Valley Syrah was used for centuries to balance out and add flavor to the wines of Bordeaux and Burgundy. It helped to prop up those wines in bad vintages. Needless to say, this practice is no longer allowed.
