Penne with Butter and Parmesan

1 Tablespoon Olive Oil
1/4 cup butter
salt and pepper to taste
1/2 onions, diced
1/2 cup grated parmesan cheese
1/2 teaspoon basil
1 package penne
1 cup soave wine

1. Put on 4-5 quarts of water to boil.

2. In a large frying pan on medium heat, melt butter with olive oil to foam. Add the onions and saute until transparent.

3. Add Soave and cook for 2-3 minutes.

4. Add basil, salt, and pepper to taste.

5. Place pasta into rapidly boiling water, stir once or twice and cook to directions on package.

6. Taste test the pasta. Drain and incorporate with sauce.

7. Sprinkle Parmesan cheese on top and serve hot.

1. Since this wine is round, as opposed to acidic, allowing it to approach room temperature before serving will show off its smooth, round nature.

2. Zeni produces several lines of Soave. The Marogne line is big a oaky. This Soave, the Classico, is more keeping to the traditional style and is unoaked.

3. Notice the cleanliness of the aroma, which yields all kinds of ripe fruit. The is a minerality or chalky quality to this wine as well, but it is in the background. This wine may also surprise you with its mouth filling and rich texture.
