• Europeans have developed a great attitude towards rosés. They understand pink wines for what they are, light and uncomplicated. If you haven't tried a rosé in a while, it's time to revisit.

• But where does that pink color come from? It is not half white and half red, as many think. All pink wines come from red grapes. But because the juice spends such a short time in contact with the skins, it takes on just a hint of the deep red color.

• So let's take that nice sunny rosé and pair it with another sunny dish, paella. The dish originated in Valencia, Spain and was standard fare for the field laborers.

• Prepared in, and eaten from the same pan, the term pot luck definitely applies to paella. If you were lucky enough to have rabbit, you added it to the pot. Otherwise, the meat that most often appeared in paella? Snails!
